Calories and energy balance

Energy balance is not in serious scientific dispute. What is genuinely disputed is whether counting calories is a useful way to act on it - and the measurement errors involved are much larger than most people assume.
Two claims get confused constantly in nutrition arguments, and separating them dissolves most of the argument. The first is that body weight change is governed by the balance between energy taken in and energy expended. The second is that counting calories is an effective way to manage that. The first is thermodynamics and is not seriously contested. The second is a practical question about measurement and behaviour, and the answer is much less flattering.
Why "just count calories" works less well than it should
Because both sides of the equation are measured badly. Self-reported food intake is one of the least reliable measurements in nutrition science: studies comparing what people report eating with objectively measured energy expenditure consistently find substantial under-reporting, and it is not confined to any one group. People are not usually lying - portion estimation is genuinely hard, and the things most easily forgotten are exactly the things most calorie-dense.
Food labels carry their own tolerance, permitted to vary from the true value. Restaurant and takeaway figures are worse. And the calories a person actually absorbs differ from the calories in the food: whole nuts, for instance, deliver measurably fewer usable calories than their listed content because some fat passes through undigested. Food processing changes this too - which is one more thread connecting back to the ultra-processed food lesson.
Expenditure is no better. Fitness trackers and gym machines estimate calories burned with error margins large enough to erase a day's deficit. And expenditure is not fixed: it falls as body weight falls, partly because a smaller body costs less to run and partly through adaptive changes, which is a large part of why weight loss slows and why the arithmetic that worked in month one stops working in month four.
What this means in practice
The useful conclusion is not that calories do not count. It is that most successful approaches work by changing intake without requiring accurate arithmetic. Every diet in this classroom is, viewed this way, a heuristic for eating less without counting: cutting a macronutrient, closing the eating window, removing ultra-processed food, raising protein until appetite falls. They differ in mechanism and in who finds them tolerable; they converge on the same outcome.
It also explains why "I'm eating 1,200 calories and not losing weight" is usually neither a lie nor a broken metabolism. It is generally a measurement problem on one or both sides of an equation that is genuinely hard to measure.
The part that is not just arithmetic
Where the simple model is fairly criticised is that it treats intake as an input a person chooses, when appetite is a regulated system responding to sleep, stress, protein intake, food palatability, energy density and hormones. Telling someone to eat less is advice about the output of a system they do not consciously control. That is why the interesting question in nutrition has largely moved from how many calories to what makes appetite settle at a lower level without a fight - and why the ultra-processed food finding, where people spontaneously ate 500 calories a day more without deciding to, is the most quietly important result in this classroom.
Where the evidence stops
Precise individual energy requirements cannot be predicted well from equations; the standard formulas carry meaningful error for any given person. How much metabolic adaptation occurs after weight loss, and how long it persists, is actively researched and not fully settled.
